Amaranth is a gluten-free nutritional powerhouse & once staple in the diets of pre-Columbian Aztec’s. It contains more protein, magnesium, fibre & iron than any other gluten-free grain.
After seeing our post on Instagram, @angeoudiable popped in for some (and a few other essentials) to experiment with.
After searching for some recipes, he decided to created his own hybrid version of Amaranth Porridge.
Amaranth Porridge with Fruit by @angeoudiable:
Added tbsp of ground cinnamon to half a cup of amaranth and 400ml coconut milk. Brought to boil and simmered with lid on for 20 minutes. In separate pan, melted tbsp of honey, adding a chopped banana, a cup of frozen morello cherries and a handful of dates. Stir fruit into amaranth when complete. Yummy.
